Baked Zucchini Fries

Serves 6

Ingredients:

  • 1 cup whole wheat bread crumbs
  • t

  • Salt and freshly ground black pepper
  • t

  • 1 cup all-purpose flour
  • t

  • Ener-G equivalent to 2 eggs
  • t

  • 3 medium zucchini, cut lengthwise into sticks

Directions:

    t

  1. Preheat oven to 350 degrees F. and spray a large baking sheet with cooking spray.
  2. t

  3. In a medium bowl,  stir together bread crumbs, salt, and pepper.
  4. t

  5. Place the flour in another medium  bowl and the egg replacer in a smaller bowl.
  6. t

  7. Dip the zucchini sticks in the flour to lightly coat, then dip in the egg replacer. Roll zucchini sticks in the bread crumb mixture to coat all sides.
  8. t

  9. Place zucchini on the prepared baking sheet and bake for 20 minutes or until the  coating is crisp.
  10. t

  11. Serve with your favorite dipping sauces.
