Watermelon and Spinach Salad

Serves 4

Ingredients:

  • 2 cups diced watermelon (seedless)
  • t

  • 4 cups spinach
  • t

  • 2 cups baby lettuce
  • t

  • 1/2 red onion, thinly sliced
  • t

  • 3 tablespoons (or more) balsamic vinaigrette
  • t

  • Pinch of sea salt and a few grinds of black pepper
  • t

  • Handful of coarsely chopped walnuts
  • t

  • Handful of crumbled feta

Directions:

  1. In a large bowl, combine watermelon, lettuce, spinach, and onion.

  3. Add vinaigrette and toss well to coat. Season with salt and pepper.

  5. Divide among 4 chilled salad plates and garnish with walnuts and feta.
