Dark Chocolate and Apricots

Dark Chocolate and Apricots

Serves 6

Ingredients:

    t

  • 1 (7-ounce) package dried apricots
  • t

  • 1/2 cup dark chocolate chips
  • t

  • 1/4 cup salted cashew halves

Directions:

    t

  1. Line a baking sheet with foil or parchment paper.
  2. t

  3. Place the chocolate in a heat-proof glass bowl.
  4. t

  5. Heat 3 inches of water in a medium saucepan over high heat, and heat until almost boiling.
  6. t

  7. Remove the pan from heat place the bowl with the chocolate on top of the pan, being careful not to let the bowl touch the water.
  8. t

  9. Stir the chocolate with a silicone spatula until melted and remove the bowl from the pan.
  10. t

  11. Dip half of an apricot in the melted chocolate and place on a parchment-lined baking sheet.
  12. t

  13. Place a cashew half on the chocolate.
  14. t

  15. Repeat with remaining apricots.
  16. t

  17. Place the baking sheet in the refrigerator for 10 minutes to solidify the chocolate.
