California Caviar

Ingredients:

  • 1/4 cup NAKANO Seasoned Rice Vinegar Roasted Garlic, Red Pepper, or Original
  • t

  • 1 tablespoon olive oil
  • t

  • 1/4 teaspoon salt
  • t

  • 1 to 2 jalapenos, seeded and minced
  • t

  • 1 clove garlic, minced
  • t

  • 1 (15-ounce) can black beans or black-eyed peas, rinsed and drained
  • t

  • 1 large tomato, seeded and diced
  • t

  • 1 yellow bell pepper, seeded and diced
  • t

  • 1/3 cup chopped fresh cilantro or parsley
  • t

  • 1/4 cup sliced green onions (green and white parts)

Directions:

  1. In a large bowl, combine rice vinegar, oil, salt, jalapeno and garlic and mix well.
  2. t

  3. Stir in remaining ingredients.
  4. t

  5. Serve immediately or cover and refrigerate until ready to use.
  6. t

  7. Serve with tortilla chips, bagel chips or crackers.
