Cinco de Mayo: Vegan Tostadas

House Foods Tofu Tostadas

Serves 8

Ingredients:

    t

  • 1 package House Foods’ Premium or Organic Tofu Medium Firm, drained and cut into small cubes
  • t

  • 1 cup finely chopped onions
  • t

  • 2 finely diced serrano chili
  • t

  • 2/3 cup chopped tomato
  • t

  • 1-1/2 tablespoons chopped fresh cilantro
  • t

  • Juice of 2 limes
  • t

  • 2 avocados, peeled, pitted, chopped
  • t

  • Salt and freshly ground black pepper
  • t

  • 8 corn tortillas
  • t

  • Olive oil

Directions:

    t

  1. Preheat oven to 425 degrees F.
  2. t

  3. In a large bowl, combine tofu, onions, chilies, tomato, cilantro, and lime juice.
  4. t

  5. Gently fold in avocado and season with salt and pepper. Cover bowl and set aside.
  6. t

  7. Lightly brush tortillas with oil and place on a large baking sheet.
  8. t

  9. Bake in the oven until tortillas are just crisp.
  10. t

  11. Mound tofu filling on top of the tostadas and place back in the oven for a couple of minutes to heat through.
  12. t

  13. Serve immediately.
