Curry Soynuts

Curry Soynuts

Makes 4 cups

Ingredients:

    t

  • 1/4 cup granulated sugar
  • t

  • 1/4 cup packed brown sugar
  • t

  • 3 tablespoons curry powder
  • t

  • 1 teaspoon salt
  • t

  • 4 cups soynuts, dry-roasted, unsalted
  • t

  • 3 tablespoons brown rice syrup

Directions:

  1. Preheat oven to 300 degrees F. and spray a large rimmed baking sheet with cooking spray.
  2. t

  3. In a small bowl, stir together sugars, curry, and salt.
  4. t

  5. Place soynuts and brown rice syrup in a microwave-safe bowl. Microwave on HIGH for 30 seconds then stir until soynuts are coated with syrup.
  6. t

  7. Sprinkle sugar mixture over soynuts and stir until coated. Spread soynuts in a single layer on prepared baking sheet.
  8. t

  9. Bake for 15 to 20 minutes, stirring after about 7 minutes. Soynuts are done when they are lightly toasted.
