Simple New Potato Salad

Serves 4

Ingredients:

  • 8 new potatoes, cut into cubes
  • t

  • 1 clove garlic, very finely minced
  • t

  • 1/4 cup very finely minced red onion
  • t

  • 1/2 cup vegan mayo or more to your taste
  • t

  • 1 tablespoon grated lemon zest
  • t

  • 1 cup chopped fresh arugula
  • t

  • 1/4 cup finely chopped fresh parsley
  • t

  • Generous pinch of salt
  • t

  • Freshly ground black pepper to taste

Directions:

  1. Cook potatoes in a large pot of salted boiling water until just fork tender. Drain and set aside.

  3. In a large bowl, whisk together garlic, onion, and mayo.
  4. t

  5. Add potatoes, arugula, parsley, and lemon zest to bowl and stir to combine. Add more mayo if desired.
  6. t

  7. Season with salt and pepper. Serve immediately or refrigerate for a few hours to meld the flavors.
