Blackberry Crumble Bars
Makes 8 bars

- 3 cups fresh blackberries
- 1/2 cup granulated sugar
- Juice of half of an orange
- 1 tablespoon cornstarch
- 2 cups old fashioned rolled oats
- 3/4 cup white whole wheat flour
- 3/4 cup packed brown sugar
- 1 tablespoon finely grated orange zest
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup coconut oil, warmed

- Preheat oven to 350 degrees F. Line a 9-inch square baking dish with parchment paper.
- In a medium saucepan over medium heat, stir together berries, sugar, orange juice, and cornstarch.
- Bring berry mixture to a boil, stirring often to reduce until mixture is thick and the berries breakdown, about 15 minutes.
- Meanwhile, in a large bowl, mix together oats, flour, brown sugar, orange zest, baking soda, and salt.
- Pour in coconut oil and mix to blend well. Reserve 3/4 cup of oat mixture for the topping.
- Transfer remaining oat mixture to prepared baking dish. Press firmly in bottom to form a crust.
- Spoon berry filling in an even layer over the crust. Sprinkle with remaining oat topping.
- Bake for 30 to 35 minutes. Cool in dish on a wire rack for 30 to 40 minutes before cutting into bars to serve warm.
