Blackberry Crumble Bars

Makes 8 bars

Ingredients:

  • 3 cups fresh blackberries
  • t

  • 1/2 cup granulated sugar
  • t

  • Juice of half of an orange
  • t

  • 1 tablespoon cornstarch
  • t

  • 2 cups old fashioned rolled oats
  • t

  • 3/4 cup white whole wheat flour
  • t

  • 3/4 cup packed brown sugar
  • t

  • 1 tablespoon finely grated orange zest
  • t

  • 1/4 teaspoon baking soda
  • t

  • 1/4 teaspoon salt
  • t

  • 1/2 cup coconut oil, warmed

Directions:

    t

  1. Preheat oven to 350 degrees F. Line a 9-inch square baking dish with parchment paper.

  3. In a medium saucepan over medium heat, stir together berries, sugar, orange juice, and cornstarch.
  4. t

  5. Bring berry mixture to a boil, stirring often to reduce until mixture is thick and the berries breakdown, about 15 minutes.
  6. t

  7. Meanwhile, in a large bowl, mix together oats, flour, brown sugar, orange zest, baking soda, and salt.
  8. t

  9. Pour in coconut oil and mix to blend well. Reserve 3/4 cup of oat mixture for the topping.
  10. t

  11. Transfer remaining oat mixture to prepared baking dish. Press firmly in bottom to form a crust.

  13. Spoon berry filling in an even layer over the crust. Sprinkle with remaining oat topping.
  14. t

  15. Bake for 30 to 35 minutes. Cool in dish on a wire rack for 30 to 40 minutes before cutting into bars to serve warm.
