Spinach Salad with Fresh Fruit and Orange Mustard Dressing

Serves 4

For the dressing:

    t

  • 1/2 cup orange juice
  • t

  • 1 teaspoon minced fresh Italian parsley
  • t

  • 1 teaspoon Dijon mustard
  • t

  • 3 tablespoons olive oil
  • t

  • 1/2 teaspoon salt
  • t

  • 1/4 teaspoon black pepper

For the salad:

    t

  • 4 medium Clementines, peeled, sliced
  • t

  • 1 avocado, halved, pitted, peeled, sliced
  • t

  • 4 ounces baby spinach
  • t

  • 4 ounces fresh blueberries

Directions:

    t

  1. In small bowl, combine orange juice, parsley, Dijon, salt and pepper, whisk while slowly adding olive oil. Season with salt and pepper. Set aside.
  2. t

  3. On four medium plates, evenly divide clementines and avocado and place in lines across each plate.
  4. t

  5. Place spinach in the center and sprinkle blueberries over the spinach.
  6. t

  7. Drizzle dressing over the salad.
