Roasted Peaches with Pine Nut Sauce

Ingredients:

- 1/4 cup vegan butter
- Juice of 1 lemon
- 1/4 cup maple syrup, divided
- 6 peaches, halved, pitted
- 1 cup pine nuts
- Pinch of salt
- Apple juice for consistency

Directions:

- Preheat oven to 400 degrees F.
- In a small microwave-safe bowl, whisk together butter, lemon juice, and 1 tablespoon maple syrup. Microwave for 30 to 60 seconds or until butter is melted. Stir well.
- Place peaches cut side up in a baking dish. Brush with butter mixture.
- Roast for 10 to 15 minutes or until peaches are lightly browned.
- Meanwhile, in a food processor, combine pine nuts, maple syrup, and salt. Process to form a thick paste. Add apple juice 2 tablespoons at a time until you get a sauce with drizzling consistency.
- Serve peaches warm, drizzled with pine nut sauce.
