Roasted Peaches with Pine Nut Sauce

Serves 6

Ingredients:

  • 1/4 cup vegan butter
  • t

  • Juice of 1 lemon
  • t

  • 1/4 cup maple syrup, divided
  • t

  • 6 peaches, halved, pitted
  • t

  • 1 cup pine nuts
  • t

  • Pinch of salt
  • t

  • Apple juice for consistency

Directions:

    t

  1. Preheat oven to 400 degrees F.
  2. t

  3. In a small microwave-safe bowl, whisk together butter, lemon juice, and 1 tablespoon maple syrup. Microwave for 30 to 60 seconds or until butter is melted. Stir well.
  4. t

  5. Place peaches cut side up in a baking dish. Brush with butter mixture.
  6. t

  7. Roast for 10 to 15 minutes or until peaches are lightly browned.
  8. t

  9. Meanwhile, in a food processor, combine pine nuts, maple syrup, and salt. Process to form a thick paste. Add apple juice 2 tablespoons at a time until you get a sauce with drizzling consistency.

  11. Serve peaches warm, drizzled with pine nut sauce.
