Ingredients:

  • 1-1/2 cups white whole wheat flour
  • t

  • 3/4 cup rolled oats
  • t

  • 2 tablespoons grated orange zest
  • t

  • 2-1/4 teaspoons baking powder
  • t

  • 1 teaspoon baking soda
  • t

  • 1 teaspoon salt
  • t

  • 3/4 cup coconut milk
  • t

  • 1/2 cup maple syrup
  • t

  • 1/3 cup vegetable oil
  • t

  • 3/4 cup cashew butter
  • t

  • 3/4 cup apple sauce
  • t

  • 3/4 cup orange marmalade

Directions:

  1. Preheat oven to 350 degrees F. and grease a muffin pan.
  2. t

  3. In a large bowl, whisk together flour, oats, orange zest, baking powder, baking soda, and salt.
  4. t

  5. In a medium bowl, whisk together coconut milk, maple syrup, oil, cashew butter, and apple sauce.
  6. t

  7. Add cashew butter mixture to flour mixture and stir until just moistened.
  8. t

  9. Fill each muffin cup half-way with batter. Spoon 1 tablespoon of orange marmalade into each cup. Top off with remaining batter.

  11. Bake for 25 to 30 minutes or until the tops are golden and spring back when pressed.

  13. Let muffins cool in the pan on a wire rack for 5 to 10 minutes. Invert and serve warm.
