Roasted Brown Rice with Gomasio

You can certainly cook rice successfully in a lidded pot on the stove, but it is so much easier when you have a rice cooker that does the cooking for you. To make rice even more flavorful, consider toasting it in the oven before adding it to the rice cooker. This roasted brown rice recipe is inspired by the recently revised and updated The Ultimate Rice Cookbook (Harvard Common Press, January 2012)  by Beth Hensperger and Julie Kaufmann. Though the cookbook isn’t solely for vegans, it will quickly inspire you to use your rice cooker to prep your family’s meals.

Roasted Brown Rice with Gomasio

Serves 3 to 4

Ingredients:

    t
  • 1 cup short-grain brown rice
  • t

  • 2-1/4 cups cold water
  • t

  • Generous sprinkling of gomasio to taste

Directions:

  1. Preheat oven to 375 degrees F.
  2. t

  3. Spread rice in a single layer on a large baking sheet. Bake until golden, 10 to 12 minutes, occasionally stirring the rice from the edges to the center to evenly toast.

  5. Place the roasted rice in the rice cooker bowl. Add water and swirl to combine. Close the cover and set for Brown Rice or Regular cycle.
  6. t

  7. When the machine switches to Keep Warm cycle, let the rice steam for 10 minutes.
  8. t

  9. Fluff with a wooden spoon. Serve hot, sprinkled with gomasio.
