Garlic Greens on Toast

Serves 2

Ingredients:

    t

  • 2 tablespoons olive oil
  • t

  • 3 cups baby spinach leaves
  • t

  • 3 cups fresh arugula
  • t

  • 2 cloves garlic, minced
  • t

  • Salt and freshly ground black pepper to taste
  • t

  • 1/4 cup sliced toasted almonds
  • t

  • 2 large slices of sourdough bread
  • t

  • 2 tablespoons vegan butter

Directions:

  1. Heat oil in a large skillet over medium heat.
  2. t

  3. Add spinach and arugula and cook, stirring, until leaves start to wilt.
  4. t

  5. Stir in garlic and continue to stir until leaves are very tender.
  6. t

  7. Season with salt and pepper. Stir in almonds.
  8. t

  9. Meanwhile, toast the bread. Spread with butter and mound sauteed greens on top. Serve immediately.
