Fresh Cherry Pudding

Ingredients:

  • 3 cups pitted cherries
  • t

  • 1 cup apple juice
  • t

  • 1-1/4 cups granulated sugar, divided
  • t

  • 2 cups all-purpose flour
  • t

  • 1 tablespoon ground flax
  • t

  • 1-1/2 teaspoons baking powder
  • t

  • 1/2 teaspoon salt
  • t

  • 1/2 cup vegan butter, softened
  • t

  • 1 teaspoon pure almond extract
  • t

  • 1-1/2 cups soymilk

Directions:

    t

  1. In a medium saucepan over medium-high heat, bring cherries and apple juice to a low boil. Reduce heat to medium-low and simmer for 10 minutes or until cherries are tender. Stir in 1/2 cup sugar and continue to simmer for 10 minutes.

  3. Preheat oven to 350 degrees F. and grease an 8-inch square baking dish.

  5. In a large bowl, whisk together flour, flax, baking powder, and salt.

  7. In a medium bowl, using a handmixer, beat butter and remaining sugar until creamy. Add almond extract and beat until incorporated.

  9. Add milk and flour mixture alternately to butter mixture, beating well after each addition.

  11. Pour batter into prepared baking dish, spreading it evenly. Pour cherries (and juice) over batter.

  13. Bake for 40 minutes.
