- 3 cups pitted cherries
- 1 cup apple juice
- 1-1/4 cups granulated sugar, divided
- 2 cups all-purpose flour
- 1 tablespoon ground flax
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup vegan butter, softened
- 1 teaspoon pure almond extract
- 1-1/2 cups soymilk

- In a medium saucepan over medium-high heat, bring cherries and apple juice to a low boil. Reduce heat to medium-low and simmer for 10 minutes or until cherries are tender. Stir in 1/2 cup sugar and continue to simmer for 10 minutes.
- Preheat oven to 350 degrees F. and grease an 8-inch square baking dish.
- In a large bowl, whisk together flour, flax, baking powder, and salt.
- In a medium bowl, using a handmixer, beat butter and remaining sugar until creamy. Add almond extract and beat until incorporated.
- Add milk and flour mixture alternately to butter mixture, beating well after each addition.
- Pour batter into prepared baking dish, spreading it evenly. Pour cherries (and juice) over batter.
- Bake for 40 minutes.
