Sauteed Beets with Agave-Mustard Dressing

Ingredients:

  • 3 tablespoons olive oil, divided

  • 1-1/2 pounds small golden or red beets, trimmed, scrubbed, quartered

  • Salt and freshly ground black pepper
  • t

  • 1 tablespoon balsamic vinegar
  • t

  • 1 tablespoon agave
  • t

  • 1 tablespoon Dijon mustard
  • t

  • 1 tablespoon finely grated orange zest
  • t

  • 2 tablespoons orange juice

Directions:

  1. Heat a skillet over medium heat. Toss beets with 1 tablespoon olive oil. Season with salt and pepper.
