Cinnamon Apple Couscous

Ingredients:

  • 2 cups apple juice
  • t

  • 1 apple, cored, diced
  • t

  • 1/4 cup dried currants
  • t

  • 1 ground cinnamon
  • t

  • 1 cup whole wheat couscous

Directions:

    t

  1. In a medium pan over medium-high heat, combine apple juice, apple, currants, and cinnamon in a saucepan. Bring to a boil.
  2. t

  3. Stir in couscous, cover, and remove pan from heat. Let stand 5 minutes.
  4. t

  5. Fluff with a fork and serve hot.
