Simple Lentils and Rice

Ingredients:

    t

  • 3 tablespoons olive oil
  • t

  • 2 onions, diced
  • t

  • 1 cup lentils
  • t

  • 3-1/2 cups cold water
  • t

  • 1 cup long-grain rice
  • t

  • 1 teaspoon salt
  • t

  • Freshly ground black pepper to taste
  • t

  • 1/3 cup finely chopped fresh parsley

Directions:

  1. Heat oil in a large skillet and cook onions, stirring often, until lightly browned.
  2. t

  3. Meanwhile, in a large pot, combine lentils and water. Bring to a boil over high heat, cover, and turn down to a simmer. Cook for 10 minutes.
  4. t

  5. Add the onion, rice and salt. Cover and simmer 20 minutes until rice and lentils are soft. If a bit of water remains unabsorbed, remove from heat and let stand 5 minutes and it will soak in.
  6. t

  7. Season with pepper and stir in parsley. Serve immediately.
