Though this mood-food book isn’t vegan, it has a wealth of healthy eating tips and recipes that you can adapt to your vegan liking. The authors’ Almond Joy Oats recipe is made with whole milk but we used Good Karma’s Vanilla Flax Milk and added extra cacao nibs.

Almond Joy Oatmeal

Serves 2

Ingredients:

  • 1 cup steel cut oats
  • t

  • 2 cups flaxmilk or other non-dairy milk
  • t

  • 1 teaspoon coconut oil
  • t

  • 2 tablespoons cacao nibs
  • t

  • 1/2 cup organic shaved coconut
  • t

  • 1/2 cup raw almonds, chopped

Directions:

    t

  1. In a medium bowl, combine oats and milk together. Refrigerate overnight.
  2. t

  3. Transfer oatmeal to a saucepan and heat, stirring, until heated through.
  4. t

  5. Stir in coconut oil, cocoa nibs, and shaved coconut.
  6. t

  7. Divide mixture among 2 bowls and top with almonds and extra milk, if desired.
