Holiday Crumb Cake

Ingredients:

  • 1 cup vanilla soymilk
  • t

  • 1 tablespoon cider vinegar
  • t

  • 1-1/2  cups all-purpose flour
  • t

  • 3/4  cup old fashioned oats
  • t

  • 3/4  cup granulated sugar
  • t

  • 1  teaspoon ground cinnamon
  • t

  • 1/2 teaspoon ground cloves
  • t

  • 1/2 teaspoon grated nutmeg
  • t

  • 1/2  teaspoon baking powder
  • t

  • 1/2  teaspoon baking soda
  • t

  • 1/4  teaspoon salt
  • t

  • 8  tablespoons chilled vegan margarine
  • t

  • 1/4  cup cream cheese substitute
  • t

  • Powdered sugar

Directions:

    t

  1. Preheat oven to 350 degrees F. Lightly grease or spray a 9-inch springform pan or round metal cake pan with cooking spray.

  3. In a small bowl, combine soymilk and vinegar. Set aside.
  4. t

  5. In a large bowl, combine flour, oats, granulated sugar, spices, baking powder, baking soda, and salt.
  6. t

  7. Cut in margarine and cream cheese substitute until crumbly. Reserve 1-1/2 cups oat mixture for topping and set aside.
  8. t

  9. Add soymilk mixture to remaining oat mixture and mix just until moistened. Pour batter into prepared pan. Sprinkle reserved oat mixture overtop.
  10. t

  11. Bake for 50 to 55 minutes or until golden brown and the center is firm to touch. Sprinkle with powdered sugar and serve warm.
