Vegan Raspberry Oat Squares

Makes 16

Ingredients:

  • 3/4 cup vegan butter
  • t

  • 3/4 cup packed brown sugar
  • t

  • 1/4 cup granulated sugar
  • t

  • 1 teaspoon pure vanilla extract
  • t

  • 1 cup all purpose flour
  • t

  • 1/2 cup almond flour
  • t

  • 2-1/2 cups old-fashioned oats
  • t

  • 1 teaspoon ground cinnamon
  • t

  • 1-1/4 cups raspberry preserves
  • t

  • 1 cup chopped walnuts

Directions:

    t

  1. Preheat oven to 375 degrees F. and grease a 13×9-inch baking dish.
  2. t

  3. In a stand up mixer fitted with the paddle attachment, beat butter and sugars until creamy. Blend in vanilla.
  4. t

  5. Add flours, oats, and cinnamon and blend well. Reserve 3/4 cup of the oat mixture and press the rest onto the bottom of the prepared baking dish.
  6. t

  7. Spread preserves over the oat mixture.
  8. t

  9. Combine reserved oat mixture with walnuts and sprinkle evenly over preserves.
  10. t

  11. Bake for 25 minutes. Transfer to a wire rack to cool completely in the dish.
  12. t

  13. Cut into squares and serve. Store in an airtight container layered with waxed paper.
