Vegan Dark Night Chocolate Mousse

Serves 6

Ingredients:

  • 1 (16-ounce) silken tofu, drained
  • t

  • 3/4 cup Stevia In the Raw BAKERS BAG
  • t

  • 1 teaspoon pure vanilla extract
  • t

  • 1 tablespoon light agave syrup
  • t

  • 1/4 cup soy milk
  • t

  • 1/2 cup unsweetened cocoa powder
  • t

  • 2 tablespoons carob powder
  • t

  • Fresh mint leaves

Directions:

    t

  1. Place tofu, stevia, and vanilla in a food processor or blender. Process until well blended.
  2. t

  3. Add agave, soy milk, cocoa powder, and carob powder. Process until mixture is fully blended.
  4. t

  5. Pour mousse into small desert cups or espresso cups and chill for at least 2 hours.
  6. t

  7. Garnish with fresh mint leaves just before serving.
