Bulgur Salad with Grilled Corn, Tomatoes, and Cilantro

Ingredients:

  • 1 cup fine bulgur
  • t

  • 1-1/2 cups water
  • t

  • 2 cups grilled corn kernels (or fresh/frozen corn kernels)
  • t

  • 2 cups grape tomatoes, each halved
  • t

  • 1/2 cup finely chopped red onion
  • t

  • 1 jalapeno, minced
  • t

  • Zest and juice of 1 lime
  • t

  • 4 green onions, sliced (green and white parts)
  • t

  • 3 tablespoons extra virgin olive oil
  • t

  • 1 teaspoon ground coriander
  • t

  • 1 teaspoon ground cumin
  • t

  • 1/2 cup finely chopped fresh cilantro
  • t

  • Salt and freshly ground black pepper to taste

Directions:

    t

  1. Toast the bulgur in a dry medium-sized saucepan over medium-high heat until it is fragrant.
  2. t

  3. Remove pan from the heat and add the water. Cover pan and set aside for 45 minutes or until water is absorbed.
  4. t

  5. Fluff bulgur and transfer to a large mixing bowl. Add remaining ingredients and stir to combine.
  6. t

  7. Serve immediately or chill and serve cold.
