Pomegranate Spinach Salad

Serves 6

Ingredients:

  • 1 large pomegranate, pulled open, arils removed, peel and membranes discarded
  • t

  • 1-1/4 cups walnut halves
  • t

  • 6 cups fresh spinach
  • t

  • 3 tablespoons Amoretti Kalamata Pomegranate Vinaigrette or your favorite raspberry vinaigrette
  • t

  • Salt and freshly ground black pepper

Directions:

    t

  1. In a large bowl, combine pomegranate arils, walnuts, and spinach.
  2. t

  3. Drizzle vinaigrette over salad and toss to coat.
  4. t

  5. Season with salt and pepper and toss again. Serve immediately.
