Brussels Sprouts with Caramelized Onions

  1. Boil Brussels sprouts in salted water until cooked through until just tender, about 7 minutes.
  2. t

  3. Transfer to ice water to halt cooking. Quarter the cooled sprouts. 
  4. t

  5. Heat oil in a large skillet over medium heat, add onions and cook, stirring often, for 15 to 20 minutes, or until caramelized. Transfer onions to a large bowl.
  6. t

  7. In the same skillet, over high heat, lightly brown Brussels sprouts.
  8. t

  9. Add onion mixture to Brussels sprouts and pour in vinegar to deglaze the bottom of the pan. Scrape the browned bits from the bottom of the pan.
  10. t

  11. Season with salt and pepper. Serve hot.
