Sprouted Mung Bean Salad with Walnuts and Dill

Serves 4

Ingredients:

  • 1 cup truRoots Sprouted Mung Beans
  • t

  • 2 cups very hot water
  • t

  • 1/2 cup chopped walnuts
  • t

  • 1/3 cup chopped fresh dill
  • t

  • 1/3 cup sliced green onions
  • t

  • 3 tablespoons extra virgin olive oil
  • t

  • 1-1/2 tablespoons lemon juice
  • t

  • Salt and freshly ground black pepper

Directions:

  1. Combine mung beans and hot water in a medium bowl. Let soak 30 minutes to 1 hour. Drain mung beans.
  2. t

  3. Add remaining ingredients to the bowl and toss well to combine. Serve immediately.
