Pear and Cranberry Green Salad

Serves 6

Ingredients:

  • 3 ripe but firm pears, cored
  • 2 tablespoons white balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • Salt and freshly ground black pepper
  • 8 cups mixed salad greens
  • 1/2 cup packed dried cranberries
  • 1 cup walnut halves

Directions:

  • Peel 1 pear and cut into chunks.
  • In a food processor or blender, combine the pear chunks and vinegar and puree. With machine running, add olive oil, blending well. Season with salt and pepper.
  • Slice remaining 2 pears into thick slices.
  • In a large bowl, combine mixed salad greens with cranberries and drizzle with some of the vinaigrette.
  • Divide salad among 6 serving plates and scatter with pear slices and walnuts. Drizzle each with a little more vinaigrette and season with a pinch of salt and a few grinds of black pepper. Serve immediately.
