Tex-Mex Waffles with Hot Pepper Jelly

Waffles for most people are solely sweet in nature, topped with maple syrup or perhaps dark chocolate chips, but my favorite breakfast waffles are spicy-sweet, made with a little chili powder and drizzled with warm pepper jelly. These are even better topped with sliced bananas.

Tex-Mex Waffles with Hot Pepper Jelly

Serves 4

Ingredients:

  • 1-1/2 cups all-purpose flour
  • t

  • 1/2 cup yellow cornmeal
  • t

  • 1 tablespoon baking powder
  • t

  • 2 tablespoons ground flax
  • t

  • 1/2 teaspoon salt
  • t

  • 1 teaspoon mild chili powder
  • t

  • 1-2/3 cups plain soy milk
  • t

  • 1/4 cup vegetable oil
  • t

  • Vegan butter
  • t

  • 1 jar hot pepper jelly, warmed in a saucepan

Directions:

  1. Preheat waffle maker according to manufacturer’s directions.

  3. In a large bowl, whisk together flour, cornmeal, baking powder, flax, salt, and chili powder.
  4. t

  5. In a small bowl, whisk together milk and oil. Pour into dry ingredients and whisk together until well-combined.

  7. Brush oil on waffle iron. Make waffles according to manufacturer’s directions or until waffles are golden brown and cooked through.
  8. t

  9. Serve hot with vegan butter, drizzled with pepper jelly.
