Vegan Macadamia Nut Brittle

Nut brittle is a tasty treat with a strong coffee for an afternoon nibble and it can also be chopped and sprinkled on your favorite vegan ice cream. This macadamia nut brittle recipe will work for any nut if you don't have macadamias on hand.

Vegan Macadamia Nut Brittle

Makes about 2 dozen pieces


    • 1/3 cup packed brown sugar
    • 1 cup superfine sugar
    • 1/4 cup corn syrup
    • 1/3 cup water
    • 4 tablespoons vegan butter
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon sea salt
    • 1 tablespoon pure vanilla extract
    • 1-1/4 cups coarsely chopped macadamia nuts


    1. Brush a rimmed baking sheet with oil or spray generously with cooking spray.
    2. In a medium-sized heavy-duty saucepan, combine sugars, corn syrup, and water. Place saucepan over medium heat and stir until sugar has dissolved.
    3. Stir in butter until mixture is smooth. Bring the mixture to a boil and continue to cook until the temperature reaches 310 degrees F. on a candy thermometer.
    4. Remove pan from the heat and quickly stir in baking soda, salt, vanilla, and nuts. Keep stirring as the mixture begins to foam. When combined, pour mixture onto the prepared baking sheet. Spread evenly with the back of a large spoon.
    5. Let mixture cool completely until it has hardened. Break it into 24 pieces. Store completely cooled brittle in an airtight container, layering with wax paper.
