Nicolle Hernandez Cunningham is a freelance TV personality, journalist and producer who has spent 15 years in the television news and entertainment industry. She's also a busy and proud mom of two small children.
Nicolle has spent much of her career as a news anchor, reporter and morning show host for CBS and NBC affiliates in Colorado and Arizona. She's also co-creator, co-host and producer of LaFusion, an English language Latin lifestyle and entertainment show.
Nicolle enjoys cooking but knows firsthand how kids can often be picky eaters, so she's always on the lookout for quick, easy and healthy recipes!
SheKnows had a chance to sit down with Nicolle and find out a little more about her cooking style when she’s at home, and how she deals with the stress of feeding two little ones.
SheKnows: Life gets crazy, especially when you’re a mom with a career. What’s your favorite go-to meal for hectic nights at home?
Nicolle: My favorite go-to meal is soft tacos with seasoned ground beef. I always seem to have some ground beef in the freezer and a variety of veggies like tomatoes, onions and bell peppers in the fridge, so I cook them up together with some added spices and serve with flour tortillas. Everyone seems to love it!
SheKnows: What’s the one thing you cook that our kids love the most?
Nicolle: As for my kids’ favorite dish, they just love mac and cheese — there's no way around it. Their eyes light up when I decide to make it as a side dish for them!
SheKnows: Cooking is a great way to spend time together as a family. Does the rest of your family share your love for cooking?
Nicolle: They love to help me cook. My daughter is old enough to slice up a few things and my son takes pride in pouring anything into a pot.
SheKnows: What about you, why do you love to cook?
Nicolle: I enjoy cooking because it has opened up a whole new world for me.
SheKnows: What’s your cooking style at home? Do you stick with foods that reflect your Latin heritage, or do you mix it up?
Nicolle: I grew up eating homemade Mexican food practically every day. Pure torture, right? It was always delicious, but I never really experienced other types of food. Now, I make all kinds of dishes, from beans and tacos to pasta with pancetta and mushrooms to salmon chowder — yum!
SheKnows: We all know kids are picky eaters and it can be tricky to make sure they get the nutrition they need. How do you get your kids to eat healthy?
Nicolle: When it comes to seeing that my kids eat healthy, I find that if they're hungry enough, they'll eat it. That includes the fruits and veggies I put in front of them. I make sure to take advantage of those hunger attacks, especially after school, and have them gobble up carrots, celery, grapes, strawberries or apples. Popcorn is a nice treat for them as well, with just a pinch of salt and minus the butter.
