Yield: 18 cookies

Make this favorite breakfast treat into a cookie this holiday season. Drizzled with a cinnamon icing glaze, these cookies taste just like their fluffy counterparts. Your neighbors and friends will be begging you for the recipe!

Ingredients:

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 egg white
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup confectionery sugar
  • 2 tablespoons milk
  • 1 teaspoon ground cinnamon

Directions:

  1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder.
  2. In a large bowl, cream together the butter sugar using an electric mixer. Beat in egg and vanilla extract.
  3. Add in dry ingredients gradually.
  4. Roll out dough on a floured surface.
  5. Mix together in a small bowl the 2 tablespoons of melted butter, cinnamon, and brown sugar.
  6. Spread the mixture onto your rolled out cookie dough.
  7. Beginning with one end, carefully roll your cookie dough into a spiral log.
  8. Place dough log in refrigerator for at least 1 hour before cutting into 1 inch spiral cookies.
  9. Place on baking sheet and bake for 8 to 10 minutes.
  10. Mix confectionery sugar, milk, and cinnamon to make an icing glaze. Drizzle over cookies.

 

Gingerbread cake

Yields: 1 cake

A seasonal favorite, gingerbread cake is the perfect morning bread or afternoon treat. Slice this cake and top with a dollop of whipped cream. Prepare gifts by placing cake on a red or green plate and sprinkle with powdered sugar.

Ingredients:

  • 2 1/2 cups flour
  • 3 teaspoons ground ginger
  • 2 teaspoon ground cinnamon
  • 1 teaspoon all-spice
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1 cup molasses
  • 1 egg
  • 1 cup boiling water

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8 or 9 inch cake pan and set aside.
  2. In a medium bowl, stir together flour, ginger, cinnamon, all-spice, baking powder, and baking soda.
  3. Using an electric mixer, beat together the butter, brown sugar, and molasses. Add egg and beat until blended.
  4. Slowly pour in dry ingredients (alternating with boiling water), mixing until blended.
  5. Carefully pour batter into prepared cake pan.
  6. Bake 35-40 minutes or until toothpick comes out clean. Let cool.

Chocolate peanut butter fudge

Yields: 24 servings

Fill a holiday tin with these rich chocolate treats for your neighbors! Made with only 4 ingredients, you can whip these out in no time without even turning on your oven! Try adding in toffee bits or crushed candy cane too.

Ingredients:

  • 1 1/2 cups semi-sweet chocolate chips (or try white chocolate chips for an added twist)
  • 1 cup peanut butter
  • 1/2 cup butter
  • 1 1/2 cups powdered sugar (sifted)

Directions:

  1. Line a jelly roll pan or 9 inch cake pan with wax paper.
  2. Using a double boiler or microwave, melt chocolate, peanut butter, and butter.
  3. Stir to combine and slowly stir in sugar until melted.
  4. Pour chocolate mixture into prepared pan and spread evenly.
  5. Allow to cool and cut into squares.
  6. Leftover fudge can be stored in refrigerator.
