- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 egg white
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup confectionery sugar
- 2 tablespoons milk
- 1 teaspoon ground cinnamon
- Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder.
- In a large bowl, cream together the butter sugar using an electric mixer. Beat in egg and vanilla extract.
- Add in dry ingredients gradually.
- Roll out dough on a floured surface.
- Mix together in a small bowl the 2 tablespoons of melted butter, cinnamon, and brown sugar.
- Spread the mixture onto your rolled out cookie dough.
- Beginning with one end, carefully roll your cookie dough into a spiral log.
- Place dough log in refrigerator for at least 1 hour before cutting into 1 inch spiral cookies.
- Place on baking sheet and bake for 8 to 10 minutes.
- Mix confectionery sugar, milk, and cinnamon to make an icing glaze. Drizzle over cookies.

- 2 1/2 cups flour
- 3 teaspoons ground ginger
- 2 teaspoon ground cinnamon
- 1 teaspoon all-spice
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 cup butter, softened
- 1/2 cup packed brown sugar
- 1 cup molasses
- 1 egg
- 1 cup boiling water
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8 or 9 inch cake pan and set aside.
- In a medium bowl, stir together flour, ginger, cinnamon, all-spice, baking powder, and baking soda.
- Using an electric mixer, beat together the butter, brown sugar, and molasses. Add egg and beat until blended.
- Slowly pour in dry ingredients (alternating with boiling water), mixing until blended.
- Carefully pour batter into prepared cake pan.
- Bake 35-40 minutes or until toothpick comes out clean. Let cool.
Chocolate peanut butter fudge

- 1 1/2 cups semi-sweet chocolate chips (or try white chocolate chips for an added twist)
- 1 cup peanut butter
- 1/2 cup butter
- 1 1/2 cups powdered sugar (sifted)
- Line a jelly roll pan or 9 inch cake pan with wax paper.
- Using a double boiler or microwave, melt chocolate, peanut butter, and butter.
- Stir to combine and slowly stir in sugar until melted.
- Pour chocolate mixture into prepared pan and spread evenly.
- Allow to cool and cut into squares.
- Leftover fudge can be stored in refrigerator.
