Easy to make in the microwave, Zurich Zucchini is made with Swiss Cheese, of course!
- 2 large zucchini, trimmed and sliced
- 1 cup onion, chopped
- 6 eggs
- 3 cups Swiss cheese, shredded
- 1 teaspoon salt
- 1 teaspoon dried basil
- 1/4 teaspoon pepper
- 1 cup ham, diced
- Grease a glass casserole dish. Mix onion and zucchini together and layer in dish. Cover with plastic wrap. Cook until tender in microwave for 7 minutes. Drain liquid.
- Beat eggs until foamy; add cheese, seasonings and diced ham. Pour over vegetables. Cover with plastic wrap. Cook in microwave for 8 minutes until eggs are set.
