Ingredients

  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 cup shredded zucchini
  • 1/2 cup crushed pineapple, drained
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 cup chopped nuts
  • 1/2 cup raisins

Directions

  1. Cream eggs, vegetable oil, sugar and vanilla; set aside.
  2. Combine flour, baking soda, baking powder, salt, cinnamon and nutmeg.
  3. Blend flour combination into egg mixture.
  4. Fold in pineapple, zucchini, raisins and chopped nuts.
  5. Pour batter into greased loaf pan.
  6. Bake at 350 degrees for 1 hour.
