Zucchini Italiano is a flavorful side dish served hot with melted Mozzarella.


  • 6 zucchini, sliced 1/4 inch thick
  • 1 stick margarine
  • 1 medium onion, sliced
  • 1, 16 ounce can tomatoes
  • 1/2 pound Mozzarella cheese, shredded


  1. Melt margarine in large skillet over medium heat. Cook the onion for about 5 minutes until golden. Add zucchini and continue cooking at medium heat, covered, for 15 minutes. Add the tomatoes and cook an additional 10 minutes. Remove the cover; add the cheese. Place in oven at 350 degrees F for 5 minutes or until cheese is melted.
