This spiced bread serves well alongside any breakfast dish. Can also be used as an afternoon pick-me-up, especially alongside a hot  cup of coffee.

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 2-1/2 teaspoons cinnamon
  • 1-1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon nutmeg
  • 3 eggs
  • 1-1/2 cups grated zucchini
  • 1 cup vegetable oil
  • 1 tablespoon vanilla
  • 1 cup dried cranberries
  • 1/2 cup chopped nuts

Directions

  1. Combine flour, sugar, cinnamon, salt, baking soda, baking powder and nutmeg; set aside.
  2. Beat eggs, zucchini, vegetable oil and vanilla.
  3. Blend flour combination into zucchini mixture.
  4. Fold in cranberries and chopped nuts.
  5. Pour batter into greased loaf pans.
  6. Bake at 350 degrees for 1 hour.
