This spiced bread serves well alongside any breakfast dish. Can also be used as an afternoon pick-me-up, especially alongside a hot cup of coffee.
Ingredients
- 3 cups flour
- 2 cups sugar
- 2-1/2 teaspoons cinnamon
- 1-1/4 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon nutmeg
- 3 eggs
- 1-1/2 cups grated zucchini
- 1 cup vegetable oil
- 1 tablespoon vanilla
- 1 cup dried cranberries
- 1/2 cup chopped nuts
Directions
- Combine flour, sugar, cinnamon, salt, baking soda, baking powder and nutmeg; set aside.
- Beat eggs, zucchini, vegetable oil and vanilla.
- Blend flour combination into zucchini mixture.
- Fold in cranberries and chopped nuts.
- Pour batter into greased loaf pans.
- Bake at 350 degrees for 1 hour.
