Zucchini Beef Casserole is a complete meal when served with a tossed green salad.
Ingredients
- 3 medium zucchini, sliced
- 1/2 onion, chopped
- 1 small green pepper, chopped
- salt and pepper to taste
- 1 cup cracker crumbs
- 1 can cream of chicken soup
- Parmesan cheese, grated
- 1/2 pound ground beef
Directions
- Arrange zucchini in greased 2 quart casserole. Add onion and green pepper. Season with salt and pepper. Cover with crumbs. Pour undiluted soup over all. Sprinkle with cheese. Bake at 325 degrees F for 45 minutes.
- Brown ground beef in skillet, stirring until crumbly. Season with salt and pepper. Sprinkle over baked casserole. Bake for 25 minutes longer.
