Zucchini Beef Casserole is a complete meal when served with a tossed green salad.


  • 3 medium zucchini, sliced
  • 1/2 onion, chopped
  • 1 small green pepper, chopped
  • salt and pepper to taste
  • 1 cup cracker crumbs
  • 1 can cream of chicken soup
  • Parmesan cheese, grated
  • 1/2 pound ground beef


  1. Arrange zucchini in greased 2 quart casserole. Add onion and green pepper. Season with salt and pepper. Cover with crumbs. Pour undiluted soup over all. Sprinkle with cheese. Bake at 325 degrees F for 45 minutes.
  2. Brown ground beef in skillet, stirring until crumbly. Season with salt and pepper. Sprinkle over baked casserole. Bake for 25 minutes longer.
