Zucchini Bake

A cheesy grated zucchini casserole side dish.

Ingredients

  • 4 cups grated zucchini
  • 1-1/2 cups shredded Monterey Jack cheese
  • 4 eggs, beaten
  • 2 cups cheese cracker crumbs

Directions

  1. Preheat the oven to 350 degrees Fahrenheit. Grease a 3-quart baking dish.
  2. Mix together the zucchini, cheese and eggs, Pour into the prepared pan. Sprinkle the crumbs over. Bake for 35 minutes.
