This moist bread makes a cozy afternoon snack, especially during the crisp, cool days of Fall.
Ingredients
- 4 cups flour
- 3 teaspoons baking soda
- 1-1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 eggs
- 3/4 cup vegetable oil
- 1-1/2 cups applesauce
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon vanilla
- 2 cups grated zucchini
- 1 cup grated apple, peeled
- 1/2 cup chopped nuts
Directions
- Combine flour, baking soda, cinnamon, nutmeg and salt; set aside.
- Beat eggs, vegetable oil, applesauce, sugar, brown sugar and vanilla.
- Blend flour combination into applesauce mixture.
- Fold in zucchini, apples and chopped nuts.
- Pour batter into greased loaf pans.
- Bake at 350 degrees for 1 hour.
