Zucchini and Walnuts make a great side dish full of flavor and crunch.
- 3 tablespoons margarine
- 1/2 cup walnuts, coarsely chopped
- 4 cups zucchini, cut into 1/2 inch slices
- Heat 1 tablespoon of margarine in a skillet. Add walnuts and stir until lightly browned. Remove walnuts from skillet.
- Heat remaining margarine and zucchini. Saute zucchini until it begins to soften. Combine walnuts and zucchini. Season to taste.
