Zucchini and Red Onion Salad is a fresh way to eat healthy. The bite of the onion enhances the mild flavor of the zucchini.
Ingredients
- 1 tablespoon red wine vinegar
- 2 tablespoons olive oil
- coarse salt and pepper
- 1/2 small red onion (finely sliced)
- 4 small zucchini (peeled into paper-thin slices with a peeler)
Directions
- Whisk together first 3 ingredients in a salad bowl
- Add onions and zucchini and toss with additional salt and pepper to taste
