Olive Cheese Balls are baked and flavored with Cheddar cheese and sherry.
- 1/4 pound Cheddar cheese, shredded
- 1/4 cup butter, softened
- 1/2 cup flour
- pinch of salt
- pinch of paprika
- 1 tablespoon sherry
- 30 regular size pimento stuffed olives, drained dry
- Blend cheese and butter. Mix together flour, salt and paprika. Combine cheese and flour mixtures. Add sherry; add more flour if necessary to form a soft dough.
- Using 1 to 2 teaspoons dough per olive, make a ball, then flatten. Wrap dough around olives and place on ungreased cookie sheet. Bake at 400 degrees F for 12 to 15 minutes.
