Yellow Squash Soup is a delicious fall entree for a cool evening or afternoon.

Ingredients

  • 1 yellow squash (sliced)
  • 1 onion (sliced)
  • 14 1/2 ounce can chicken broth
  • pepper (to taste)
  • 1/8 cup plain yogurt

Directions

  1. Combine squash, onion and broth in a medium soup pot.
  2. Over medium-high heat, cook for 15 minutes
  3. Combine squash mixture, yogurt and pepper in a food processor
  4. Process until smooth
  5. Return soup to pan and heat through
