Yellow Squash Soup is a delicious fall entree for a cool evening or afternoon.
- 1 yellow squash (sliced)
- 1 onion (sliced)
- 14 1/2 ounce can chicken broth
- pepper (to taste)
- 1/8 cup plain yogurt
- Combine squash, onion and broth in a medium soup pot.
- Over medium-high heat, cook for 15 minutes
- Combine squash mixture, yogurt and pepper in a food processor
- Process until smooth
- Return soup to pan and heat through
