The beef in this recipe can be replace with pork if you would rather use ham.
Ingredients
- 1 pound dry pinto beans
- 6 cups cold water
- 2 pound lean beef, cut into bite size pieces
- 1 green bell pepper, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tsp. salt
- 1/4 tsp. crush red pepper
- 1/4 tsp. cumin
- 1/2 tsp. oregano
- 1 8 oz can tomato sauce
- 1/2 tsp. cooking oil
Directions
- Put beans in a bowl and fill with water to soak overnight.
- Drain beans and set aside.
- In a skillet saute onion, pepper and garlic in oil.
- Add beef to the skillet and brown.
- Place all ingredients in a crock pot and stir.
- Add enough water to cover all ingredients.
- Cook on low 3 to 6 hours.
