Winter Barley Soup is made with tender chunks of succulent lamb.
Ingredients
- 2 1/2 pounds lamb stew meat, cut in 1 1/2 inch chunks
- 2 tablespoons butter
- 1/2 cup barley
- 2 medium onions, sliced
- 2 tablespoons parsley, chopped
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 bay leaf
- 1 1/2 cups celery, chopped
- 1 1/2 cups carrots, sliced
- 1/2 green pepper, diced
- 1/4 teaspoon dried thyme
Directions
- In Dutch oven over medium-high heat, brown lamb in butter; add 6 cups hot water and next 6 ingredients. Simmer, covered, over medium-low heat about 1 1/2 hours.
- Stir in remaining onion and the rest of the ingredients and cook 30 minutes or until meat is tender. Remove bay leaf.
