Wild Rice with Apples and Pecans is the perfect side dish for chicken or cornish hens.
Ingredients
- 1 cup wild rice
- 3 cups chicken stock
- salt and pepper to taste
- 2 tablespoons butter
- 1 apple, peeled and diced
- 1/2 onion, diced
- 3 tablespoons pecans, toasted
Directions
- Saute onions in butter until translucent. Add rice and stir, add stock and cover. Cook slowly until tender, about 30 minutes.
- 5 minutes before it's finished, add apples. Just before serving add pecans.
