A sweet, rice salad dish.

Ingredients

  • 2 cups cooked wild rice, chilled
  • 2 large unpeeled red apples, diced
  • 1 tablespoon lemon juice
  • 2 tablespoons brown sugar
  • 2 stalks celery, chopped
  • 1/2 cup plain, non-fat yogurt
  • 1/4 cup low-fat mayonnaise

Directions

  1. Stir together the apples, lemon juice and brown sugar, until well coated. Blend in celery and rice.
  2. Combine the mayonnaise and yogurt, fold in with the rest of the salad ingredients.
