A sweet, rice salad dish.
- 2 cups cooked wild rice, chilled
- 2 large unpeeled red apples, diced
- 1 tablespoon lemon juice
- 2 tablespoons brown sugar
- 2 stalks celery, chopped
- 1/2 cup plain, non-fat yogurt
- 1/4 cup low-fat mayonnaise
- Stir together the apples, lemon juice and brown sugar, until well coated. Blend in celery and rice.
- Combine the mayonnaise and yogurt, fold in with the rest of the salad ingredients.
