Enjoy Summer's bounty in Whole Wheat Zucchini Bread.
Ingredients
- 3 eggs
- 1 cup vegetable oil
- 1 cup brown sugar
- 2 cups grated zucchini
- 1 teaspoon vanilla
- 2 cups whole wheat flour
- 1 cup flour
- 1 teaspoon soda
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 1 tablespoon cinnamon
- 1 cup nuts, chopped
Directions
- Beat eggs in bowl until frothy. Add next 4 ingredients, mixing well. Sift dry ingredients together. Add to egg mixture, beating well. Stir in nuts.
- Pour into 2 greased 4 by 8 inch pans. Bake at 325 degrees F for 1 hour or until loaves test done. Remove from pans and cool on rack.
