These sweet muffins make a cozy breakfast snack, especially alongside a hot cup of coffee.
Ingredients
- 1-1/2 cups rolled oats
- 1-1/2 cups whole wheat flour
- 1/3 cup brown sugar
- 3 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon salt
- 1 cup fresh blueberries
- 1 cup skim milk
- 1/2 cup mashed bananas
- 2 tablespoons corn oil
- 1 egg
Directions
- Combine oats, whole wheat flour, brown sugar, baking powder, cinnamon, ginger and salt. Gently add blueberries, mixing until berries are thoroughly coated.
- In a separate bowl, mix together milk, banana, corn oil and egg. Blend into flour mixture.
- Pour batter into a greased muffin tin. Bake at 400 degrees F for 15-20 minutes.
