These sweet muffins make a cozy breakfast snack, especially alongside a hot cup of coffee.

Ingredients

  • 1-1/2 cups rolled oats
  • 1-1/2 cups whole wheat flour
  • 1/3 cup brown sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • 1 cup skim milk
  • 1/2 cup mashed bananas
  • 2 tablespoons corn oil
  • 1 egg

Directions

  1. Combine oats, whole wheat flour, brown sugar, baking powder, cinnamon, ginger and salt. Gently add blueberries, mixing until berries are thoroughly coated.
  2. In a separate bowl, mix together milk, banana, corn oil and egg. Blend into flour mixture.
  3. Pour batter into a greased muffin tin. Bake at 400 degrees F for 15-20 minutes.
