These healthy muffins are delicious alongside breakfast or can be served as an afternoon snack.

Ingredients

  • 3/4 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup butter
  • 2 tablespoons orange juice
  • 2 tablespoons beaten egg
  • 3/4 cup grated carrots
  • 1/4 cup raisins

Directions

  1. Cream butter, orange juice and egg.
  2. Combine flour, brown sugar, cinnamon, baking powder, baking soda and salt.
  3. Blend flour combination into butter mixture.
  4. Fold in carrots and raisins.
  5. Pour batter into prepared muffin tins.
  6. Bake at 350 degrees for 20-25 minutes.
