White bean pesto salad

Although this salad could easily be the star of the show, the simple mix of white beans, arugula and pesto make the perfect companion to any entree. Situated next to pork chops or chicken, the simplicity of this salad shines and the flavors overwhelm you, in a good way. We can think of a thousand different ways to pair it, but we'll be honest, we ate it straight out of the bowl with a fork. 


  • 4 cups baby arugula
  • 15 ounces white beans
  • 2 cups fresh basil leaves
  • 1/4 cup olive oil
  • 1/4 cup chopped walnuts
  • 2 tablespoons lemon juice
  • 1/2 cup Parmesan cheese
  • Liberal dashes of salt and pepper


  1. To prepare the pesto, place the basil, walnuts, olive oil, Parmesan, salt and pepper and lemon juice in a food processor. Pulse on low until the mixture is creamed. Add additional salt and pepper to taste.
  2. In a large salad bowl, mix the pesto, arugula and beans together. Garnish with additional lemon zest and Parmesan. Enjoy!
