Walnuts and Zucchini

Walnut and zucchini skillet.


  • 3 tablespoons margarine
  • 1/2 cup walnuts, coarsely chopped
  • 4 cups zucchini, cut into 1/2 inch slices
  • 1/4 teaspoon salt


  1. Combine 1 tablespoon of margarine and the walnuts in a skillet. Heat until the walnuts are browned. Remove from the skillet.
  2. Add the remaining margarine and zucchini to the skillet. Saute the zucchini until softened. Stir the walnuts back in and season to taste.
